Get an M1 Mac mini with 16GB and if down the road you really have too many issues with virtual instruments, you can always spring for a decent external SSD, that should mostly work fine and solve most issues. We use an M1 Mini (16GB) for daily production (Twisted Wave, not Pro Tools) and its a little rocket ship We do big encoding batches and it rips through them 3x that of an i7.
